Slow Cooker Chicken Tacos

These chicken tacos are loaded with flavor but with only a few ingredients! You can throw everything into the slow cooker right before you leave for work and then have a hot meal waiting for you when you get home!! Easy peasy and a dinner the whole family will love!

I like to serve these tacos with cheese sauce, chopped onions, cilantro and a lime wedge. If you take another 5 minutes the night before or in the morning, everything will be done when it’s time to eat with no prep work involved at all at dinner time!

You can make this shredded chicken and use it in so many different recipes besides tacos! It’s also so delicious on quesadillas, salad, nachos, enchiladas, soups, the options are endless! It’s a great meal prep protein to have on hand and make a variety of meals throughout the week.

This is also a great recipe for when you forget to pull out meat for dinner the night before, as you can place frozen chicken breast right into the slow cooker and cook for 8 hours on low.

Ingredients

  • 1 1/2 lbs chicken breast

  • 1 tbsp cumin powder

  • 1 tbsp chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/4 tsp smokey paprika

  • 1 - 12 ounce jar salsa verde

  • tortillas

Instructions

  • Place the chicken down in a slow cooker and add all the seasonings on top. Pour the salsa verde directly over the chicken and set slow cooker on low. Cook for about 4 hours for defrosted chicken or 8 hours for frozen chicken

  • Shred chicken and serve on tortillas with your favorite toppings! I like to serve with cheese sauce, chopped onion, cilantro, and a squeeze of lime
